This week we talk about an important component of SECOLA: Edible Education.
We don’t really get beyond a preamble about our own histories, what we grew up with and got exposed to. But it does lay out the complex territory that is how we make our food choices - which leads to the kind of health outcomes and environmental impacts that are landing us in trouble.
We will pick this up again next week but there are glimpse in our conversation today of how we approached food and nutrition in earlier decades and therein lies some solutions and approaches for the future.
